MoT - 28

28. Today I'm thankful for Special K candy. It's so delicious and pretty easy to make, no baking required! It's perfect for gifts for friends and family this upcoming Christmas season, and it makes enough to keep some for yourself!

Here's the recipe, thanks to my sister-in-law Renee.

1/2 c. sugar
1/2 c. light corn syrup
1 c. peanut butter
1 tsp. vanilla
3 c. Special K cereal
1 c. chocolate chips (any kind)
1 c. butterscotch chips

In a pot, boil both sugar and syrup together for about 30 seconds. Don't let it change colors or boil any longer or it will come out hard.

Remove from heat and add the peanut butter and vanilla, mixing well.

Add the cereal to the mixture until it's well coated.

Grease a 9x13 pan (or smaller if you want it thicker) and add the cereal mixture to it, spreading it out to form a base.

In a small glass bowl, melt together the chocolate and butterscotch chips in the microwave, heating only for about 30 seconds at a time so it doesn't burn. Mix well after each heating until smooth. Pour on top of the cereal mixture and let it set up as it cools.

Then get ready for a party in your mouth! :)
